I’m interested to go to Whole Foods and see if there really is much of a difference on prices. Before I can do that, I’ve got veggies in the fridge that need to be eaten so I don’t let stuff just go to waste. Luckily I’m a big fan of veggies thrown together. For lunch today, I made a veggie quesadilla. No cheese though, guacamole in its place…a guacadilla?
I heated a pan coated in coconut oil and sauteed minced garlic, chopped onions, green bell peppers, mushrooms, and sliced carrots. I glazed the pan with some soy sauce (normally I would use Bragg’s liquid aminos, but low sodium soy sauce is a good swap), cooked a bit more, and added black pepper. I heated two whole wheat tortillas in the oven and slathered some spicy guacamole on them. The meal was filling and the guac was a great cheese alternative as it often can be. My only regret is that I forgot to add baby arugula before I devoured it, but I can make up for that later with a second attempt! As is often the case, this delicious meal was super easy to make and took little time.
