What you need:
1 cup Brown rice
Can of corn
Can of black beans
1/2 an onion, diced
1/2 a bell pepper, diced
1 tsp Onion powder
2 tsp garlic powder
2 tbsp cumin, separated
1 tsp ground red pepper
Salt and pepper to taste
1/2 an avocado, diced
Grapeseed oil to coat the pan
Prepare rice in rice cooker or according to instructions.
Drain and rinse corn and black beans.
Sautee pepper and onion, add spices(just 1 tbsp cumin.)
Cook for several minutes.
Add corn and black beans and mix well.
Add remaining cumin. Cook for several more minutes.
Meanwhile, prepare vegan cheese sauce, using cayenne in place of turmeric.
Add rice, then black bean mix, then avocado chunks to bowls. Top with diced avocado. Top with cheese sauce.
Top it all off with a dollop of vegan sour cream!
