Fancy Frozen Pizza


Sal had talked about getting a potato pizza from Mellow Mushroom, but since we had a Daiya fire – roasted veggies pizza and fingerling potatoes at home, we decided to make our own.
Preheat over 475°
Thinly slice fingerling potatoes (4-5 will fit nicely on the pizza depending) and toss in olive oil, salt, and freshly ground black pepper.  Place on a foiled pan and place in the oven with the pizza.  They should both be ready in 10 minutes, but keep an eye on the potatoes and take them out when  lightly browned and crispy.
Add the potatoes to the pizza.
We added Toffuti Sour Cream and Phoney Baloney coconut bacon.
Delicious and simple, a nice way to dress up a frozen pizza!
